The January 2010 Daring Bakers’ challenge was hosted by Lauren of Celiac Teen. Lauren chose Gluten-Free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe on are 101 Cookbooks and www.nanaimo.ca.

The Nanaimo bar is a dessert of Canadian origin popular across North America. It’s a type of layered no-bake bar named after the city of Nanaimo, British Columbia. It consists of a chocolate and graham cracker crumb layer, topped by a layer of light vanilla or custard flavored buttercream, which is covered in yet more chocolate.  The bar is thought to have originated south of Nanaimo in Ladysmith in the early 1950s by a local housewife from Cowichan Bay, by the name of Mabel Jenkins.  Mabel submitted the recipe for publication in the Cowichan Women’s Institute Cookbook.  The bars became quite popular and were soon being sold in many of the coffee shops in and around Nanaimo.  They were originally called Mabel Bars, but area tourists came to refer to them as “Nanaimo Bars”, and the name caught on.  They have since come to be known as one of Canada’s favorite confections. read more >>
