Ever seen this stuff before? I came across this product at the supermarket the other day. It is a ready made chocolate cheesecake filling from the fine folks that make Philadelphia Brand cream cheese. Well, when I’m making a cheesecake, Philly is always the brand I reach for, so I guess that is good enough for me. I picked up a tub and took it home to see what it was all about. I have to say, it wasn’t bad. In fact, it was pretty good. With a little doctoring up, it made a pretty darn tasty dessert!

Later that day, I was trying to figure out what to do with my new discovery. I decide to make you a little something to get you in a “chocolate” kind of mood so that you might think of me when casting your vote in Culinate’s Death by Chocolate contest. Anyway, I made you a Chocolate Mascarpone Cheese Pie. I made a chocolate cookie crust with chocolate wafer cookies and melted butter. Then, I added mascarpone cheese to the cheesecake filling to make it richer and smoother. To top finish it off, I topped the pie with strawberry Cool Whip. I loved the pretty pale pink color! It is perfect for Valentine’s Day.

I hope you like it. It was the least I could do after bugging you so relentlessly about the contest!

Chocolate Mascarpone Cheese Pie
2 cups chocolate wafer cookies, crushed into crumbs
3 tablespoons melted butter
1 tub Philadelphia Brand chocolate cheesecake filling
1 8 ounce container of mascarpone cheese
1 tub strawberry Cool Whip

Mix the cookie crumbs and melted butter together in a bowl. Press into a 9 inch pie plate. Chill for 30 minutes.

In a large bowl, combine the cheesecake filling and mascarpone together, mixing well. Pour filling into the pie shell and smooth it out. Chill for at least 1 hour.

Top with Cool Whip, slice and serve.
