Fresh Fig Tart with Orange Flower Custard

fig-tart-9

Before the last of the season’s lush fresh figs disappear from the markets, I wanted to share one more “figgy” recipe with you.   This Fresh Fig Tart with Orange Flower Custard is one of my favorites.  The custard is  light and creamy, thanks to the addition of crème fraîche, and subtly laced with the heady, floral scent of orange flower water.   For the crust, I like to use a variation of Dorie’s Sweet Tart Dough, swapping out some of the regular flour with almond flour.  I love the flavor and slightly crumbly texture of this crust, and I think it pairs really well with the earthy flavors of the figs and orange flower water.  And, I also love that it can simply be pressed into the tart pan, eliminating the need for rolling.  That alone shaves off a couple of hours in prep time.   In fact, everything about this tart is simple and casual – with a side order of elegant.

As I mentioned, the custard filling for this tart is made with crème fraîche.  It’s not at all what I would consider a traditional custard.  Aside from the inclusion of the crème fraîche, this version only requires two egg yolks, as opposed to the several in most other recipes.  Not only that, but this custard base is simply whizzed up in a blender before being poured into the tart shell.  How easy is that?  There is no cooking, tempering or thickening involved, which means less chance for anything going wrong.   It also means a lighter, brighter filling that accentuates the flavor of the fresh figs, instead of overtaking it.  read more >>

FFwD: Leek and Potato Soup Recipe

Friday, December 3, 20108 Comments

One of this month’s rotation of French Fridays with Dorie recipes is Leek and Potato Soup.  As luck would have it, I just happened to have a surplus of potatoes and leeks that didn’t get used for Thanksgiving.  Poor little things!  They’ve been feeling lonely and unloved just sitting …

TWD: Not-Just-For-Thanksgiving Cranberry Shortbread Cake

Tuesday, November 9, 201021 Comments

In the three years that I have owned Dorie’s Baking: From My Home to Yours, her Cranberry Shortbread Cake flew completely under my radar.  I probably never would have noticed it, much less baked it, if it hadn’t been this weeks TWD pick.  Why?  Well, first of all, because …

FFwD: Marie-Helenes Apple Cake

Friday, October 29, 201019 Comments

Most of the time, I love the idea of apples more than I love the actual apples themselves. They’ve never been one of my favorite fruits.   It’s what they represent – cool, crisp Autumn days, the heady aroma of cinnamon and spice wafting through the house from a baking …

TWD: Caramel Pumpkin Pie

Tuesday, October 19, 201025 Comments

One of the many things I love about Dorie’s recipes as that most of them are pretty forgiving.  That is to say, that when I’m not paying attention and screw something up, I can usually fix it and no one but me ever knows.   Case in point: this …

FFwD: Vietnamese Spicy Chicken Noodle Soup

I’m really enjoying this new little group, French Fridays with Dorie.  So is Mr. SGCC.  He likes that I’m cooking real food, and not just sweets.  I like that too, but I also like that if I get really busy I don’t have to participate every week.  It takes …

FFwD: Gougeres

Friday, October 1, 201026 Comments

Oh, Happy Day!  Dorie’s new cookbook has finally arrived!  I picked up my copy of Around My French Table last week and was in love before I got past the dust cover. The book is filled with over three hundred of Dorie’s favorite recipes, culled from her time spent …

TWD: Chocolate Ganache Ice Cream

Tuesday, August 10, 201029 Comments

Okay, I’ll admit it.  I’m not a big fan of chocolate ice cream.  Never have been.  I really don’t know why that is, because I love other chocolate things.  I love brownies, chocolate chip cookies and chocolate cake. And, I absolutely adore chocolate pudding, especially when it’s homemade.  …

TWD: Burnt Sugar Ice Cream and a Crazy, Messed Up Week

Tuesday, May 4, 201051 Comments

This has been one crazy, messed up week!  Honestly, I don’t even know where to begin. But, if there ever was a week where I could have used some of Dorie’s sinfully creamy and delicious Burnt Sugar Ice Cream, this was it!
If you read my Lemon …

TWD: Dulce de Leche Duos

Tuesday, March 23, 201039 Comments

I have a terrible cold and I feel like crap, so this post is going to be short and “sweet”.  This week’s Tuesdays with Dorie recipe is Dulce de Leche Duos, selected by Jodie from Beansy Loves Cake.  Basically, they are sandwich cookies that contain dulce de leche right …
