Daring Bakers Make Piece Montee

piece-montee-1

Why, oh why do these Daring Bakers challenges always sneak up on me? It happens every time!  I woke up at 4:00 this morning in the kind of cold sweat that could only mean that today was the “reveal date”.  And, I had nothing.  Absolutely nothing.  Again.  So, I dragged myself out of bed, put on a pot of coffee and (very quietly) got to work.  Let me tell you, it’s not easy to create a culinary masterpiece in the dead of night with few night lights and a sleeping puppy in the corner of the room! But, I did my best.  Unfortunately, the situation wasn’t conducive to taking photos, so I didn’t get any “process shots”.  But, I did get a few nice ones of the finished product once the sun came up.  C’est la vie!

The May 2010 Daring Bakers’ challenge was hosted by Cat of Little Miss Cupcake. Cat challenged everyone to make a piece montée, or croquembouche, based on recipes from Peter Kump’s Baking School in Manhattan and Nick Malgieri. A classic piece montée is a high cone made of profiteroles (cream-puffs) sometimes dipped in chocolate, bound with caramel, and usually decorated with threads of caramel, sugared almonds, chocolate, flowers, or ribbons.  Piece Montée, literally means “mounted piece” in French.  You may know this dessert by its other name – Croquembouche (“crunch in the mouth”). read more >>

Orange Tiramisu

Tuesday, April 6, 2010 21 Comments

After I whined and carried on about the Tiramisu recipe in the February Daring Bakers challenge, I got several requests for my tried and true, old standby tiramisu recipe.  When Easter rolled around, I decided to make it and share it with you.  There was one problem, though.  …

Dominator Honey-Vanilla Bean Panna Cotta and Why I Love Facebook

Tuesday, March 16, 2010 48 Comments

I’ve thought about them so many times over the years.  Little girls in blue and grey, enveloped in giggles as they played hopscotch and double dutch in an asphalt covered schoolyard.  Little girls racing home after school to watch Barnabas Collins and Angelique face off on Dark Shadows.  …

Daring Bakers Make Tiramisu

When I first learned that this month’s Daring Bakers challenge was Tiramisu, I thought “Woo Hoo!”.  At last, an easy one!  I’m Italian.  I can make tiramisu in my sleep!   Then I read something about making our own savoiardi, which are the “lady fingers” that act as the …

TWD: Raspberry Blanc-Manger

Tuesday, July 21, 2009 102 Comments

I’ve heard it said, “If anything can go wrong, it will.”   And yesterday, it did!
I went to bed on Sunday night pleased with the fact that this week’s TWD selection was already made and resting comfortably in my fridge. All I needed to do was take some glamour …

TWD: Lemon Cup Custard

Tuesday, March 10, 2009 46 Comments

This week’s TWD recipe seems to have caused a lot of consternation among my baking colleagues. Many of them lamented that Dorie’s Lemon Cup Custard was just too “eggy”. I kind of don’t get that, because this recipe is for an egg custard, which by its …

TWD: Creme Brulee

Tuesday, September 30, 2008 55 Comments

When I saw that this week’s Tuesdays with Dorie selection was Creme Brulee, my heart did a little happy dance. I adore everything about creme brulee, from that first tapping of your spoon through its crispy, crackly, caramelized sugar crust, to that first heavenly mouthful of soft, …

TWD: Feels Like the First Time (Chocolate Pudding)

Tuesday, July 15, 2008 73 Comments

The first dessert I ever remember my mother making for me when I was a little girl was chocolate pudding. She used a packaged brand called My T Fine. With great anticipation, I’d watch as she measured out the milk into a pot, added the …

Seductive Strawberry-Banana Trifle

I swear, sometimes I wish I lived alone. I mean it. I really love my family, but it would be nice to be able to focus on a project once in a while without hands reaching over my shoulder or dirty glasses appearing out of nowhere in the …

kiss the cook!

I’m a professional musician, aspiring chef, wife, mother, daughter and sister, who used to be a lawyer in a previous life. My love of food comes from a long line of wonderful and creative Italian home cooks who didn’t always have a lot, but knew how to make a lot out of what they had. I hope that you enjoy yourself while you’re here, and visit often. read more >>
