<p style="text-align: justify;">I just can’t seem to get enough of those tasty Florida blueberries!  It’s probably because my subconscious keeps telling me that they’ll be gone soon.  I  plop them on cereal and in yogurt.  I mix them into salads.  I make <a href="http://stickygooeycreamychewy.com/2008/08/12/twd-blueberry-sour-cream-ice-cream/" target="_blank">ice cream</a>, <a href="http://stickygooeycreamychewy.com/2008/07/08/tuesdays-with-dorie-double-crusted-blueberry-pie/" target="_blank">pies</a> and <a href="http://stickygooeycreamychewy.com/2010/07/08/gingery-blueberry-shortcake-sliders/" target="_blank">shortcake</a>.  I bake muffins, <a href="http://stickygooeycreamychewy.com/2008/08/13/you-asked-i-delivered-blueberry-almond-crumble-bars/" target="_blank">bars</a> and <a href="http://stickygooeycreamychewy.com/2011/05/03/reel-em-in-with-blueberry-boy-bait/" target="_blank">cakes</a> with them.  And, I bake them into luscious, fruity, juicy crisps, like this one.</p>
<p style="text-align: justify;">Cobblers, crisps and crumbles – I can never get them straight!   My understanding is that a crisp is a baked fruit dessert that is topped with a crunchy, crumbly topping made from sugar, flour, butter and often rolled oats and nuts. That sounds good to me, so I’m calling it a crisp.  Whatever you call it, it’s one of the simplest, yet most delicious ways to use succulent seasonal fruits.  <span id="more-3389"></span></p>
<p style="text-align: justify;">For this crisp, I used lots of tender, plump, fresh blueberries,  and a few sweet, juicy mangoes that I had lying around as well. To jazz things up a bit, I also added some fresh orange zest and a handful of crystallized ginger.    The topping contains rolled oats, sliced almonds and turbinado sugar for a little extra crunch. Part of the beauty of a recipe like this is that you can use whatever kinds of fruit that strike your fancy. Peaches, nectarine and plums all make great crisps, as do apples and pears. The possibilities are endless!</p>

<p style="text-align: justify;">There are two components to this dish – the fruit filling and the topping.  Make the topping first and let it chill a while in the fridge to get nice and clumpy.  Then get your fruit ready.</p>

<p>Dump your fruit into a baking dish.  I made sure to use one that has at least two-inch sides so that there wouldn’t be any unfortunate fruit accidents in my oven.  I’m leaving for <a href="http://www.blogher.com/blogher-food-11" target="_blank">BlogHer Food</a> in two days.  I don’t want to worry about cleaning no stinkin’ oven!</p>

<p>Take your topping out of the fridge and smush your fingers around in it to break it into small clumps.  Go ahead.  It’s fun!  Then, sprinkle it evenly on top of the fruit.</p>

<p><strong><span style="font-size: medium;">Gingery Blueberry-Mango Crisp</span></strong></p>
<p>Ingredients</p>
<p>Crisp Topping:</p>
<p>1 1/2 sticks (12 tablespoons) butter, melted<br />
1 cup all purpose flour<br />
1 cup rolled oats<br />
1/2 cup brown sugar, packed<br />
1/2 cup turbinado sugar (Sugar in the Raw)<br />
1/2 cup sliced almonds<br />
Pinch of salt</p>
<p>Filling:</p>
<p>2 pints fresh blueberries<br />
2 fresh mangoes, peeled and cut into 1-inch chunks<br />
1/4 cup crystallized ginger, diced into small bits<br />
Grated zest from 1 orange<br />
1/2-3/4 cup granulated sugar, according to how sweet your blueberries are<br />
2 tablespoons cornstarch</p>
<p>Directions</p>
<p>Preheat oven to 350 F.</p>
<p>Mix all of the dry topping ingredients together in a bowl large enough for mixing.  Pour in the melted butter and stir with a fork until the dry ingredients are moistened and form clumps.  Cover with plastic wrap and let rest in the fridge while you prepare the filling.</p>
<p>Combine all of the filling ingredients together in another large bowl and toss until the fruit is well coated.</p>
<p>Pour the filling into a baking or casserole dish and spread out evenly.  Dump the crisp topping all over the top of the filling.</p>
<p>Bake for 40-50 minutes, or until topping is golden brown and filling is hot and bubbly.</p>
<p>Let cool for at least 15 minutes before serving to give the filling a chance to thicken up a little.</p>
<p>Serve as is or topped with ice cream, whipped cream, yogurt or crème fraiche.</p>
<p>Serves 6-8, depending on how generous you are with your portions.</p>

<p style="text-align: justify;">In an attempt to make November a little less frazzled for us, our fearless leaders at <a title="Tuesdays with Dorie" href="http://tuesdayswithdorie.wordpress.com/" target="_blank">TWD</a> are allowing us to present our weekly recipes out of order.  This works for me as this week’s recipe is <a href="http://www.doriegreenspan.com/" target="_blank">Dorie’s</a> Chocolate Caramel Chestnut Cake.  Not only is this cake rather labor-intensive to make, but it calls for chestnuts, which I detest.  I suppose I could have used a different kind of nut, but frankly, I just didn’t have the energy this week.  My shoulder is still frozen from making all those <a href="http://stickygooeycreamychewy.com/2009/10/27/macaron-madness-with-the-daring-bakers/" target="_blank">macarons</a> and fillings for the DB challenge last week, and I couldn’t bear the thought of any more mixing and stirring, for a while at least!  Instead, I decided to make Dorie’s more shoulder-friendly Cran-Apple Crisps.  <span id="more-1124"></span></p>

<p style="text-align: justify;">These crisps were a snap to put together and are absolutely delicious!  The recipe is also quite forgiving.  I made them last night at around 10:00 pm, which because of the time change here, was 11:00 on my body clock.  In my fatigue-induced stupor, I made several errors.  First of all, instead of adding cinnamon to the crisp topping, I accidentally added ground cardamom.  To my foggy eyes, both spice jars looked the same.   I also forgot to butter the ramekins before filling them.   Then, I baked them at 350 degrees F. instead of 375, as the recipe directed.  After about thirty minutes, I realized what I had done and turned up the heat in my oven.  I was certain that I was going to end up with a sticky, burnt mess, but I didn’t.  Despite all my goofs, the crisps turned out just fine.  The topping was crunchy and golden and the filling was the perfect balance of sweet-tart  fruitiness with a thick, syrupy texture.</p>

<p style="text-align: justify;">For my crisps, I used Honeycrisp and Fuji apples, fresh cranberries and plump, sweet, dried Bing cherries.  I had never baked with fresh cranberries before and I was a bit skeptical.  I needn’t have worried.  While the cranberries were quite tart, the tartness was nicely offset by the sweetness of the apples and cherries.  For not a whole lot of work, the payoff was great.  This really is a lovely dessert that would certainly be worthy of a place at any holiday table!</p>

<div align="justify">Dorie&#8217;s Cherry Rhubarb Cobbler recipe is really not difficult at all. The filling is just cherries, rhubarb, sugar, ground ginger and a little salt. The biscuit topping is a mixture of white and whole wheat flours, milk and, of course, butter. Pretty standard fare. I followed the directions precisely, but, for some reason I have yet to figure out, it turned out awful! It was a shame too, because this week I actually had an event to go to and I needed to bring something.</div>

<div align="justify">My first clue that something wasn&#8217;t right was when I took the cobbler out of the oven. I checked it after forty-five minutes, but the biscuit topping hadn&#8217;t puffed up very much, so I baked it for fifteen minutes more. After that, the fruit was all nice and bubbly, but the topping still didn&#8217;t look much better. There wasn&#8217;t much else I could do, so I crossed my fingers and took it to the party anyway. </div>

<div align="justify">When I served the dish the topping was hard as a rock on the surface and totally raw on the inside. For some reason, the dough didn&#8217;t cook through. The fruit filling was very tasty but the topping was inedible. </div>

<div align="justify">What could be better on a lazy, sultry, summer day than a fistful of fresh, lush berries, bursting with sweetness; their ripeness dripping in rivulets down your chin as you take that first big, juicy, sublime bite? Not much, I suspect. But, this week&#8217;s Tuesdays with Dorie recipe, <strong>Mixed Berry Cobbler</strong>, comes pretty close. </div>

<div align="justify">Gorging on Mother Nature&#8217;s summer bounty is one of the simple, basic pleasures of the season. Dorie&#8217;s cobbler sets the perfect stage for berries to strut their delicious stuff. This recipe is not a difficult one and has lots of room for improvisation. The crust is made from a basic sweet biscuit dough that can be left as is or flavored any way you like. Dorie specifies that either fresh or frozen berries can be used, as well as a number of other fruits. </div>

<div align="justify">For my cobbler, I chose to use a mixture if fresh and frozen blueberries, raspberries, blackberries and strawberries. I did this because, while the fresh strawberries were reasonable priced, the other berries were out of sight and not all that sweet. The frozen berries were the same price, but for twice as much fruit. I thawed them and let them drain really well before I mixed them up with the fresh ones. Then, I added the sugar and a little framboise, because I like it.</div>
<div align="justify">I was a little nervous about making the biscuit dough as directed in the recipe. Many of my fellow TDW&#8217;ers reported that they were disappointed with it. But, since it was an integral part of the finished product, I did do it Dorie&#8217;s way. I had to add some extra cream to my dough, because it was a little too crumbly. I also added 2 tablespoons of light brown sugar, a 1/2 teaspoon of cinnamon and a pinch of ground cardamom as well. Before I baked the cobbler, I brushed a tiny bit of cream and sprinkled some raw turbinado sugar on top of the crust. </div>

<div align="justify">I have to say that this cobbler rocked! The fruit was the perfect balance of tart and sweet. The berries were really soft and juicy, but Not mushy. The crust was fabulous. I loved the texture. It was crunchy, yet tender at the same time. The cinnamon and cardamom flavors were subtle, but definitely evident. I think that they really added a little something extra to that crust, which was the perfect backdrop for those gorgeous berries! </div>

<div align="justify">My cobbler was served with some honey vanilla ice cream on the side, though I was secretly wishing that I had some creme fraiche to top it with. I think that the ice cream kind of &#8220;drowned out&#8221; the flavors of the cobbler. Since I definitely plan to make this dish again, I&#8217;ll have to remember that for next time. </div>
