zucchini-cakes-5

Necessity is the mother of invention. In other words, when someone really, really needs something, he or she will figure out a way to do or get it. Sometimes, I’ll be in the middle of making a recipe and realize that I’m missing an ingredient.  Actually, this happens a lot, since I’m not exactly the best organized person in the world. So, I’ll have two choices: scrap the whole thing, or find something else to use instead.  I hate to waste food, therefore, scrapping is not an option.  Usually, after rummaging around a bit, I’ll find something that works, and .

This idiom also comes into play when I have too much of a particular ingredient and I’m struggling to find ways to use it.  Case in point – all of that fresh, beautiful zucchini from the garden I was telling you about a few weeks ago.  Now, I know that there are zillions of different ways to prepare zucchini.  But, given the fact that the temperatures here have been topping out in the 90′s every day, my viable options are limited.  That’s HOT, people! The last thing I want to be doing is spending any more time hovering over my stove than absolutely necessary.  Since no one around here is fond of eating raw zucchini, and Mr. SGCC appears to be allergic to his grill, my next best solution is a recipe that requires very little cooking time – like these Cheesy Zucchini Latkes.   read more >>

Rhubarb Berry Crumb Bars Recipe

Tuesday, June 21, 201116 Comments

Remember that luscious rhubarb berry jam I made last week?  Well, we’ve been enjoying the heck out of it here at Chez SGCC.  I’ve slathered it on homemade bread, spooned it into creamy yogurt and cooked it into a few tasty recipes.  I also baked some into these delectable …

FATHERS DAY RECIPES FOR YOUR CAVEMAN

Friday, June 17, 20116 Comments

I’ve referred to Mr. SGCC as a caveman many times over the years, mostly tongue-in-cheek – mostly.   While he is usually a pretty good sport about eating anything I put in front of him, what he really craves is meat – and lots of it.  Big, manly man-sized portions!   …

Rhubarb Berry Jam Recipe

Thursday, June 16, 201110 Comments

Every year around this time, I find myself feeling out of the loop and a bit frustrated.  It seems like all the other food bloggers are surrounded by a bounty of fresh rhubarb and are proudly flaunting their mouthwatering rhubarb creations, while I remain pathetically rhubarb-less.    I’m not sure …

Zucchini Olive Oil Cake with Crunchy Lemon Glaze Recipe

Sunday, June 12, 201126 Comments

It seems like we have zucchini coming out of the woodwork these days!  Everyone has it growing like mad in their gardens and no one can use it up fast enough.  I happen to adore zucchini, but even I’ve been feeling a bit challenged trying to find some different …

Move Over Stella d Oro: Cherry Almond Biscotti Recipe

Thursday, June 9, 201118 Comments

Until recently, I never understood some people’s fascination with biscotti.   My parents loved them.  I did not.  To me, they were long, thick, rock-hard bricks with a peculiar licorice taste, obnoxiously trying to pass themselves off as cookies.  They didn’t fool me, though.  Whatever they were, I was certain …

Salted Peanut Chews Recipe

Tuesday, June 7, 201121 Comments

From the first moment I saw these sticky, gooey, creamy, chewy gems on Michelle’s site, Brown Eyed Baker, I knew that I would have to make them.  There wasn’t a doubt in my mind.  And, of course I also knew that I would have to share them with you, …

Better Than Rosies Meat Ragu Recipe

Sunday, June 5, 201123 Comments

There’s a popular story that’s been floating around my family for years.  My mother revels in telling it, and every time she does, it elicits a mixture of nervous laughs, horrified looks and hasty signs of the cross.  It’s about my mother’s childhood BFF, Rosie.  Rosie and my mom …

Ba Da Bing Cherry Pie Recipe

Thursday, June 2, 201121 Comments

When I spied the first Bing cherries of the season at the market the other day,  I delightedly stashed a few pounds in my cart.    Yes, I know that it’s still a little early for them to be at their peak, but after being cherry deprived for nearly a …

Crunchy Smores Bars Recipe

Tuesday, May 31, 201116 Comments

When we were kids, every family barbecue ended the same way.   We’d run around the backyard looking for long thin sticks, and load them up with marshmallows.  Then, as the fire on the charcoal grill began to die down,  we’d toast them over the glowing embers.   My little brother …
